Food has a reciprocal relationship with the ambient air in their surroundings. They either absorb or discharge water to their surroundings until they have reached a state of equilibrium with their surrounding environment. All food products contain water and any loss of water will effect the appearance and thereby the quality of the product.

Products as meat and vegetables have an equilibrium relative humidity of 95-98%. If the ambient air surrounding the products have an RH at 70%, the equilibrium of the product is higher than the surrounding environment. The result is, that the products releases water to equalize the equilibrium.
